Stuffed Red Peppers

I bought a bunch of red peppers a few weeks ago to make fajitas. Unfortunately, I got home and realized I didn’t have any tortillas. There was no way that I was going back to the store, so I set my mind to figure out what I could do with the ingredients I had at home. Somehow, stuffed red peppers came to mind. I had the rice, the feta, the guacamole, the sour cream and the peppers, it was perfect! In the end, the missing tortillas was a blessing in disguise. I hadn’t ever made stuffed peppers. In fact, I rarely even bought red peppers. Now, they are a whole new meal under my belt, which I am very thankful for. They are healthy, filling, and easy to make. They’re even pretty quick to throw together if your rice is already cooked: a great weeknight, vegetarian meal.

Thai Green Curry

I’ve been feeling in a bit of a recipe slump these days. Even though our trip to Hawaii inspired me in a couple of very tasty ways, the dishes were not in the main meal department. Instead, since we’ve been back, I’ve been turning to my favourite tried and true recipes instead of trying new things. All of this is totally normal and fine, except when you are trying to run a food blog. Luckily, last week I had a meeting right next to a very large Asian supermarket and I decided to stop in for a couple of things that we can’t normally get our hands on. While perusing the produce aisle, I saw some fresh lime leaves, which I have never used before. Needless to say, they made me very excited and I knew my slump was over (for now).

Tamago, Rice and Greens

My egg universe has recently expanded. I have certainly used eggs as a vessel to eat a lot of things. Omelettes, in particular have been a way to eat both classic and more unusual flavours. However, when I eat my eggs scrambled, poached, fried, or boiled I tend to season them with some salt and pepper at the most. I never actually considered flavouring the eggs themselves with anything else, until I came across My Name is Yeh’s tamago recipe.

Gumbo

When I first created this blog almost a year (eek!) ago, what I was the most excited about was to get super adventurous in the kitchen. Instead of cooking the same thing over and over again, I would be forced to make something new and blog-worthy every few days, discovering tons of new recipes and flavor combinations. While this has certainly been the case, sometimes I forget about the things that I used to cook <b>before</b> the blog came about. This gumbo is one of those meals we would put together now and again and it was always delicious. I haven’t made it in ages and somehow it came to mind the other day and it was as delicious as I remember it this time around.
