The day that I made these squares started off kind of crappy. Nothing in particular went wrong, I just had very little motivation to get up and face the day. However, after reading this recipe on Sprouted Kitchen, I couldn’t bear to wait another second. I jumped up and made these squares with what I had on hand. It wasn’t because I was hungry or wanted to eat them right away, but it just looked so beautiful, easy, and delicious and making them made my day brighter.

These squares are wonderful for a number of reasons. First, there is no cooking involved, so it is the perfect late summer, stuffy apartment, there’s no way I’m turning on the oven sort of dish. Second, it is so fast to throw together. Take out your food processor, blend up some ingredients (that I personally always have on hand, which makes this recipe even better), top with yogurt and fruit of your choice. Last, it is pretty much guilt free. The crust is amazing in that it sticks together really well and tastes so perfectly sweetened. I have made it on its own since to eat with some yogurt and fruit (I guess it’s just a deconstructed version of this dish) and it’s so satisfying and filling. Also, thanks to the base, these guys aren’t a pain to cut up and serve. They stay together well.

I hope that you get to enjoy these with the last of the summer peaches, but I am sure that figs, raspberries or blackberries would be equally delicious.

Peach and Yogurt Squares Recipe

Serving Size: 8 generous squares

Barely adapted from Sprouted Kitchen

Crust
3/4 cup toasted walnuts
3/4 cup almonds
6 medjool dates, pitted
2 teaspoons coconut oil
1/2 teaspoon ground cinnammon
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
Filling
3/4 cup plain greek yogurt (2%)
1/4 cup light brown sugar
3 medium, ripe peaches

Line a 9x5 loaf pan with parchment paper.

Put your almonds in a food processor and grind until it becomes almond meal (make sure not to over-process them or they will become almond butter).

Put the rest of the ingredients for the crust in the food processor and process until a crumb forms.

Check that the crumb sticks together when you pinch it with your fingers. If not, add a teaspoon of water at a time until it does.

Press crust on the bottom of loaf pan.

Whisk brown sugar into yogurt.

Spread yogurt over crust in loaf pan.

Slice peaches and layer on top of the yogurt.

Chill until ready to serve.

Remove from loaf pan and cut into squares.
