I’m always on the lookout for fresh carbs that come together quickly. You obviously can’t bake a loaf of bread on a whim, so I was on the lookout for some good tea or soup-dunking fare (sweet or savoury is always a dilemma, am I right?). While I’ve never had them before, biscuits seemed like a pretty good idea. They are very appealing with their crunchy looking golden brown exterior and soft-pillowy insides. I could only imagine the number of varieties of biscuits one could make once you have a solid base recipe in your repertoire, so I was off on a mission to find one.
My freezer contents ebb and flow. I find that because our freezer isn’t so big, I have to intermittently stop myself from making freezable goods so that we can actually make our way through what is already there. At the moment, I am definitely in an ebb stage so I am free to make some stuff to hide away for a lazy day. One of my favourite things to have in the freezer are scones that you can have on hand for a special weekend breakfast. They taste just as good from the freezer compared to when you bake them straight after making them and even though they take some time to bake, you get a delicious pastry breakfast without any work, other than turning on the oven, in the moment.
It took me a very long time to realize that I should make spanakopita at home. It’s one of those things that is so easy to replicate in a successful way but it just never crossed my mind. I committed to making it and bought tons of spinach and then couldn’t find the phyllo dough anywhere. I don’t know why it was so difficult to find. I suspect that most of the places that I went to had it but that it was hidden somewhere in the frozen section and I just kept walking past it over and over again. Eventually though, a helpful employee pointed me to the right aisle and I was off on my spanakopita adventure.
I’m feeling pretty nostalgic about my time in London lately. It hasn’t been the easiest transition to Calgary so I often find myself thinking about the places and people that I miss. I always think back fondly to my time in the U.K. I didn’t eat out much when I was there but one of the foods that London introduced me to were scones. I had never had a scone before living there, and I waited until just before I left to try one. The strawberries and cream scones were delicious and ever since then I have tried so many different varieties.
