As the summer races to an end, I am trying to take advantage of all of the corn, cherries, and peaches that I can. Simple is always best, I love eating my cherries and peaches raw and the best corn in my books is charred, slathered in butter, salt and pepper. But, if I want to make a meal out of the corn, this is the best way to do it. I love how I can buy a couple of ear of corn and feta and end up with a deeply delicious and satisfying dish. I came across a very similar version of these charred corn and pepper tacos years ago on Smitten Kitchen. Since then, I have made it countless times for the two of us, friends, and family brunch. They are a super easy, dependable meal that tastes delicious and comes together in no time at all.
One of our friends is a complete expert when it comes to Indian food. Since we’ve been here, she’s hosted a couple of feasts at her apartment. It’s mind blowing to me that she can make so many diverse, vegetarian (!) dishes, all by herself. On the surface most of her food seems super simple but as soon as you eat it, you know someone with a knowing hand cooked them. A couple of weeks ago, we decided we would host one of these feasts together. I will be an extra pair of hands (grasping at as much knowledge as humanly possible) but she is definitely in charge of the recipes. Even though our dinner is a couple of weeks away, I got so excited about it, that I had her bring me to a specialty Indian grocery store to show me the spices, produce and other treats that I have sometimes come across but have no idea what to do with. I restrained myself and came home with a few new spices and different types of lentils to play with. With no capability to freestyle, the first thing I did was dust off my old copies of Vij’s at Home and Madhur Jaffrey’s Quick and Easy Indian Cooking. I’ve promised myself that I will cook Indian once a week so that I can actually work through the dozens of recipes that I have marked with post-its.
Before I started this blog, I imagined the kitchens of food bloggers to be filled with wonderful food all of the time, and especially, an endless list of ideas for dinner. While I can’t speak for anyone else, figuring out what to make for dinner is a pain almost every single night in our house. On top of the hassle of figuring out what to make, lately, there have been so many nights when it’s already 7 o’clock, we have no idea what to make and I’ve had to whip something up on the fly. Generally I want the meal to be satisfying but healthy and on the table in under twenty minutes. Luckily, this soup fits the bill.
Spaghetti squash is so exciting. It’s so satisfying to take a freshly roasted spaghetti squash and shred it with a fork. It’s remarkably easy. Why do spaghetti squash break apart that way? Are there any other vegetables that can be shredded so uniformly and beautifully? I don’t know. I have to admit, after roasting and shredding it I was pretty much prepared to eat it as is. It would be a lovely and satisfying side dish or snack eaten simply with salt, pepper and spice, but I needed a meal.
