Last weekend my friend and I cooked an Indian feast for 15 people. All I can say is: so much food. My friend was especially worried that we wouldn’t have enough to feed everyone, so on top of the coconut chai ice cream I made (basically just a frozen version of this with coconut milk instead of almond milk), I decided I would make some cardamom ginger brownies. On her way out the door though, she asked if I would make a pistachio cardamom cake with her one day. It’s one of her favourite treats. That sounded a lot more exciting to me than brownies so I quickly looked up a recipe, checked my pantry and got to work.
Around three o’clock, every day, I get a hankering for something sweet. To be more specific, I want something sweet and chocolate-y. Normally I just have a square of chocolate, which is great when all I want is chocolate, but sometimes it leaves me feeling less than satisfied. Sometimes I am also slightly hungry or getting a little sleepy and need something more filling and energizing to pick me back up. Something with some chew, that will satisfy me until dinner rolls around. Nothing in particular really filled that void in the past. But, the past couple of weeks these healthy chocolate cherry brownies have been doing the trick.
Today is my birthday. Happy birthday to me! While I’m not so big on birthdays, I thought it was a good excuse to have some people over. One of our big problems with having a large number of people over though is our lack of dinnerware. Of course, this could easily be solved for a trip to IKEA, but the problem comes up so rarely and we’ll be packing up and moving in no time, again, so I don’t want to bother getting another set of dishes. So, my challenge for the evening was to think of things people could just pick up and easily eat. Luckily there are lots of delicious foods that fit the bill. Dessert-wise, the first thing I thought of were some simple chocolate chip cookies. I have seen Ashley Rodriguez’s (from Not Without Salt) recipe floating around the internet lately so I thought it was a good time to give them a try. I have to say, they are the perfect chocolate chip cookies.
Triple chocolate pancakes are delicious. Is this a surprise to anyone? Probably not. Unfortunately, this is the first time I have actually made (and possible ever eaten) triple chocolate pancakes. While chocolate chip pancakes are definitely pretty standard, triple chocolate is less so. So, when my boyfriend suggested we make chocolate chip pancakes, I felt pretty original (and excited) when I one-upped him with suggesting a triple chocolate version.
