I discovered songza. It’s amazing. Have you ever wondered what it would sound like if your life had a soundtrack? I think that this is as close as it gets to that. You choose your playlists based on your moods, what you’re doing, the time of day and off it goes. Playing in the background, always. It’s especially soundtrack-y for me since I am pretty much always in my apartment, with my computer whirring away. Now that winter has set in, there are highs of -20 and I feel like I am stuck in a strange box, filled with lovely music. It’s not too bad.

Red Apple and Onion Grilled Cheese

I never have bread in the house (as I had mentioned previously), we don’t go through it quickly enough but when the craving for french toast or grilled cheese strikes I typically, deeply regret this reality. However, I do sometimes have tortillas on hand, which are kind of just as good. They definitely aren’t as satisfying to eat and are completely unsuitable for french toast, but they do serve as a decent carb vessel for some delicious fillings. Every single day last week I ate a toasted tortilla with some vegetables and cheese. I normally snack all day long and don’t really sit down to have a meal, so it was a nice change of pace. The best version by far that I had was a red apple, onion and gouda combination.

Spiced Apple Cider

I have recently found a lot of joy in drinking a mugful of something steaming hot and delicious. It’s almost always tea, sometimes hot chocolate, and even more rarely apple cider. In fact, I think that the one and only time I made apple cider was late last spring, when we got caught in a freezing cold rain storm wearing nothing more than shorts and a tank top. I got home, drenched, chilled to the bone, and all I wanted was a nice, spicy, hot mug of cider (which at the time was odd, how do you suddenly start craving something that you never consume?).

Go-To Apple Cake

Before my food blogging days when having people over for dinner required tried and true recipes rather than an excuse to test new recipes on other people, this apple cake was my go-to desert. Unsurprisingly, it is a Smitten Kitchen recipe. Surprisingly, the first time I made it, I was convinced that I had done something horribly wrong. The original recipe instructs you to pour the batter into the tin, and there is no way (in the half a dozen times I have made this) to pour this batter. It is thick. Most of the time, I spread the batter with a wooden spoon, sometimes even using my fingers to distribute it evenly. Anyway, I should have trusted the Smitten because despite my initial doubts, this cake is absolutely delicious time and time again. It’s a total crowd pleaser.
